Theres top grade Okayama rice but the unique character is generated by the Shizuoka yeast numbered 5MT14 which can ferment even in this low mineral environment. It produces beautiful juicy aromas evoking dark grapes. To balance, the brewery has elevated the acidity. Single pasteurized but best kept cold.
